The 9th week of the Wet & Forget Great Backyard Giveaway is upon us. Here’s another simple drink for the blender and shrimp recipe for the grill!
DRINK OF THE WEEK
Pina Colada
Requires: pineapple juice, pineapple, vanilla ice cream, coconut rum, dark rum, orange juice, heavy cream, ice
- Add 3 oz. Pineapple juice, 2-3 scoops of ice cream, 1 oz. Coconut rum, 1 oz. Dark rum, a couple of splashes of OJ, 1 oz. Heavy cream and 4-5 ice cubes in a blender.
- Mix until well blended.
- Garnish with a pineapple slice!
SHRIMP FROM THE GRILL
Grilled Shrimp Bruschetta!
Requires: 12 jumbo shrimp deveined, 4 large tomatoes, 6 slices of Italian bread, salt, pepper, garlic salt, olive oil, coconut oil, rosemary, and red wine vinegar.
- Place shrimp, 1c. Olive oil, 1/4c. Coconut oil, 1/4 c. rosemary, 1 Tbs. Red wine vinegar in a plastic Ziploc bag and place in the fridge for 20-30 minutes.
- Add 1c. Olive oil, 1/4c. Coconut oil, 1 Tbs. Red wine vinegar and 6 diced tomatoes into a bowl to marinate for 20-30 minutes.
- Turn the broiler on. Place 6 slices of Italian bread on a cooking sheet and drizzle with olive oil and a little garlic salt. Put in broiler until bread is nicely browned.
- Warm grill and place marinated shrimp on the grill for 3 minutes per side.
- Place grilled shrimp on browned Italian bread and add the tomato mixture from the bowl. Salt and pepper to taste. Ready to serve!
